The most delicious Italian Ciabatta on earth.
Ingredients for 2 loaves
500 g flour, type 550
21 g yeast, (1/2 cube)
350 ml water, lukewarm
2 tsp. salt
1 tsp sugar
5 tbsp. olive oil
herbs, dried, to taste
Preparation
Working time approx. 30 min | Resting time approx. 3 hrs | Total time approx. 3 hrs 30 min
Dissolve the yeast in the water, add the sugar.
Gradually stir in the flour (the easiest way to do this is in the mixing bowl of a food processor).
Knead into a smooth dough and let rise, covered, for 1 hour.
Then add the olive oil, salt and dried herbs (e.g. 1 tsp rosemary and 1 tsp oregano) and knead again, let rise for another two hours.
Form two ciabatta loaves on a floured baking sheet, dust lightly with flour and let rise briefly one last time (about 30 minutes).
Place in oven preheated to 220 °C (430 F) and bake for about 20-30 minutes (depending on the oven).
