This curry spiced ketchup is famous in Germany and a must-have on your Currywurst which wouldn't be the same without.
Ingredients for 1 servings
3 tablespoons curry powder
1 tablespoon oil
1 tsp cayenne pepper or dried chilies
100 ml cola
100 ml orange juice
350 ml tomato ketchup
2 tsp tomato paste
salt
pepper
Preparation
Working time about 10 minutes | Total time approx. 10 minutes
Sauté the curry powder carefully in the oil. Be careful not to get it too hot or the curry powder will quickly turn bitter.
Add the cayenne pepper and/or chilies and mix well in a small pot.
Now add the cola, (be careful to add slowly, it will foam a bit) reduce slightly and then add the orange juice. Continue to boil down slightly while stirring constantly.
Then slowly stir in the tomato ketchup and tomato paste. Stir everything together very well and continue to simmer gently for another 2-3 minutes.
Season to taste with salt, pepper and possibly some curry powder.
If you like, you can add chili until the desired flavor / spiciness combination is achieved.
Tastes best when the fried sausage (if it is to be a curry sausage) is sprinkled with some curry and paprika powder before the curry ketchup is added.
The ketchup also goes very well with anything grilled.
The addition of sugar is not necessary, because the cola and also the orange juice bring enough sweetness.
Keeps in the refrigerator for about 1 week.
